Here’s a recipe for this week’s Sunday cake: a vegan apple cake for which I got the inspiration from a vegan oat milk cake recipe.

For the dough
- 250 g wheat flour
- 1 Pack. baking powder
- 1 Pack. vanilla-pudding
- 2 tablespoons chia seeds
- 120 g sugar
- 80 ml rapeseed oil
- 200 – 250 ml home made oats and sunflowerseed milk

For the topping
- 5 apples
- almond pieces
- lemon juice
- cinnamon
- sugar

Mix the ingredients for the dough—place in a greased baking dish lined with fine breadcrumbs. Mix the apple pieces, almond bits, some sugar, cinnamon and lemon juice and put on top.
Bake at 175 °C for approx. 1 hour.
